Prepare the Meatballs: In a large mixing bowl, combine ground beef, ground pork, breadcrumbs, egg, Parmesan cheese, sour cream, salt, pepper, and parsley. Mix gently with your hands until just combined. Avoid overmixing to keep the meatballs tender.
Shape the Meatballs: Using your hands, shape the mixture into 1-inch meatballs and set them on a tray. Chill in the refrigerator for 15 minutes to help them hold their shape during cooking.
Cook the Meatballs: Heat olive oil in a large skillet over medium heat. Add the meatballs in batches, cooking until browned on all sides, about 2-3 minutes per side. Remove and set aside. (They don’t need to be fully cooked yet.)
